THE PATAO BRUNCH EXPERIENCE WITH NESPRESSO

Time and time again, I am amazed by my close circle of friends and their endless talents. One friend, in particular, Anthony Martin, recently started

PATAO

, an intimate brunch concept, "a culinary exercise" if you will, dedicated to preserving the preparation of Philippine cuisine in an elevated, communal manner. It's also a passion project that pays homage to Anthony's ancestry and late grandmother,

Mildra 'Mommy Patao' Martin

, hence the name "PATAO".

In collaboration with another friend of mine,

Jimmy Sianipar of The Minor Detail

, Anthony splits his time, between being a molecular biologist at University of Southern California (USC) and culinary experimentalist, to bringing his epicurean vision to life through vivid photos, mouthwatering food and friendship.

Over the weekend, I had the privilege of attending a delightful PATAO brunch with three scrumptious courses in the company of new and familiar faces. I brought along the new Nespresso VertuoLine machine* as my contribution to the dessert course, which entailed "a layered cake with cashew dacquoise, browned buttercream, and drunken vanilla wafers topped with roasted pistachio!" After contemplating different recipes for the dessert pairing, I decided that a cup of unadulterated black coffee and shots of espresso would suit the course best. And I was right. Everyone was surprised by the depth of flavor and aroma the

Nespresso

coffee brought to our last course. It was, unanimously, a memorable finale to an exquisite brunch!

To commemorate my first PATAO brunch, here's a quick GIF I made that perfectly encapsulates my experience! It is the GIF that keeps on giving:
