1. Night + Market Song
The shoulder of the pig is one of the most underrated cuts. This particular dish has an incredibly creamy finish due to an overnight soak in condensed milk + turmeric. So good -that you'll never find yourself ordering pork belly ever again.
There's calamari and then there's this. Delightful, bite-sized portions of fresh octopus sinuously deep fried in a light batter. The garlic and chile oil toppings were the perfect garnish - eat with a generous dip of sriracha.
Papaya salad received a delicious makeover in the form of a fried nest. Peel away at it and drown each bite into the refreshing chile dip. It's true testament to the adage that everything tastes better when deep fried.
If you're ever having a bad day or simply in the mood for a sweet dessert that's worth every calorie - this is it. Your mind and tastebuds will be blown away by this seemingly simple dish. The contrasting textures, straightforward flavors - I cannot stop raving (or thinking) about it ever since.
